Your tank should always have 0 Ammonia, 0 Nitrite, and can have up to 100 ppms of Nitrate. But its best to keep it below 25 ppm or else it'll get risky

ammonia 0, nitrite 0, nitrate should usually be around 20. It's not that harmful to fish, but it does promote algae growth. Some species are a bit sensitive to it, but it'll always be present in an established aquarium.
