I already looked up the lighting requirements and all that, but do these plants need to have their roots covered in the gravel or above gravel?
 
Assuming you are referring to the Amazon sword plant (a common name for several species or varieties in the genus Echinodorus) it should be planted with its root mass in the substrate. Don't bury the crown, which is the point from which the leaves grow upward and the roots downward.

These plants will always benefit from a good substrate fertilizer tab, such as Flourish Tabs. One close to the roots, replace every 3 months or so. Makes quite a difference.
