I'm not sure on any exact percentage number, but you would need to be breeding a "hugely massive" amount of sterbais, even then you would not be guaranteed an albino. Ed4567 is right, albinism is recessive, so to guarantee future generations, you would need to have at least 2 albinos thrown from your regular sterbais, pushing the odds even higher, and they would need to be 1 male and 1 female, pushing the odds yet still higher. On top of that, it seems like I read that sterbais are one of the more difficult corys to breed.
