What is the largest lone cichlid I could have in my tank, and would it get along with my bristlenose? If not, say so so I'll know. Looking for something that is highly personable, not timid!

For a tank that size, severums is what came to my mind. If you're looking for a "dog" fish, then a severum should be perfect! But although the fish index here says that 30G is the minimum size needed to house one, I feel that's not enough...
 
Its not enough...Some Dwarf cichlids like Keyholes or Rams would be perfect in that tank....Severums will get too big for that tank...and although 30 is listed as minimum...Thats bare minimum and poor living conditions for the fish.

I've got a pair of angels in my 29 gallon and they're doing well... maybe a convict?
 
You can do a pair of any fish that doesn't get longer then about 6" as an adult. If you just want a single specimen you can go with one a little larger, but not much - the tank is still only 30 gallons and only two feet long. There are many smaller Acara's that would work, as well as the Firemouths. A pair of Jewels would work (from the rivers of African, but similar) or perhaps a couple of Festivum.

As far as any of the big 'dog' fish (JD, Texas, Oscar, Red Devil, etc.) you will not find one appropriate for this tank.
 
I've tried a firemouth, did not work out at all.

Would have liked a sev, think they are pretty cool, but don't want to jam one in there.....

I'll check out the acara's, maybe look into angels or a convict.

IMO a 30 gallon is too small for a sevrum. You could have convicts, but dont get a male and female, they breed like crazy. Also, kribs come to mind. You can even try a keyhole cichlid.
