Questions about tank reno coming soon (!!)

Hi! Noob fish fanatic setting up my very first planted tank! I finally found a few stores (physical and online) that can provide all of the plants I need. All I have to do is find a correct light (either for the hood, as a whole new hood, or a better one for my desk lamp) which I believe would be around 6500k for a floating plant cover with low light plants beneath? I have several questions before I'm putting anything in my tank though.

If I replace the current gravel with quikrete play sand, do I empty the entire aquarium and then replace it? I've heard that you have to do certain things while putting it in to avoid the sand clouding the water but I'm not really certain what that is. Additionally, my main concern is the welfare of my betta, and how to safely remove and store him until his tank is ready for him. I still have his cup that he can go into relatively easily but it's small. I also have a 1.7/2g tank but the opening is smaller and getting him in and out might be a hassle unless I dip the whole tank it. I want to lure him in with food to reduce stress as much as possible. I also want to put an extra small bubbler in my tank as Hank has repeatedly shown interest in them. Is there a best place to put it in case it disturbs the plants or something? Like beneath the filter?

Sorry for all of the questions! This is probably the most psyched I've been for a good while, Hank is gonna have plants!! And I'll have the budget for it!! And maybe he'll even build a bubble nest!! :D Thank you in advance for the help!
 
For the sand just rinse it well and put it in. When you refill the tank just be careful not to disturb it. If it is super cloudy you can do a water change, if not it should settle over night
 
Only thing you are taking out of the tank is the gravel and replacing with sand, you will be keeping the same filter media correct.

Yes, I'm also going to keep the old gravel in a bag with holes so the beneficial bacteria can be released into the tank so I don't disrupt my cycle
