thinking of going down the EI route but was just wondering how strict is the 50% water change per week? Having a 6' tank holding 60+ gallons I'd rather not have to remove and replace 30 gal per week. I usually do something around 25%-30% per week.

Can the EI method be adapted to smaller changes? If so what would I be looking at doing?

I think the thing to remember with EI is that the E stands for estimative. I carry out the 50% water change because my tank requires a full dose of EI and the water change resets the tank for the next week of dosing, avoiding high build up of fertilisers.

If you find that you do not have such a high demand for ferts in your tank, you may well be able to modify your water changes accordingly. Just make sure that you are maintaining your ferts around target value and don`t let them build up too high through neglected water changes.
