Hi, I recently bought a 75 gallon tank to try breeding fish in and since I am new to Breeding fish I started with a simple fish to breed (a Convict cichlid) I bought 2 of them a male and a female and they had laid eggs and I went out for a weekend, and I had my mom feeding a tank for me for the weekend, but when I came back I had found that the Male had died, he looked really beaten up.

So which leads to my question, Is it possible for me to get a new Male for the female to breed with? Or will I need to buy a completely new pair?

Oh, I forgot to Mention that after the Male died, I noticed that the female lost her Bold black stripes and white color to her, And now she looks like a dull grey with faded stripes, should I be worried?

May have simply been aggression from the female, sometimes dithers are quite useful for this as they give the pair something to chase other than each other. Generally you should be able to get a pair to reform, so long as they don't get too territorial with each other on arrival.

Losing the stripes is because of losing the breeding drive I'd imagine, unless there is a water condition issue.

So today I picked up another male to replace the other one, and it was instant aggression, the female convict pushed him up into the top corner of the tank and any time he would even come half way down she'd chase him back up, So I moved the male I had purchased into a different tank for the time being, is there any idea on how long I should wait before adding the male into this tank with the female?

You could take the female back & get half a dozen younger fish, wait for a pair to form more "naturally", then rehome the other four. Might give you a pair with a stronger bond.
Good luck.
