A tall nice looking and hardy plant that you may be interested in is called Elodea densa (click here to see).

If the tank you speak of has only been established for a weeks/months after completing a fishless/fish-in cycle you should really be looking for some fast growing plants such as the Elodea as slow growers have a tendancy to have algae spores grow on them in newly cycled tanks.

You may want to avoid getting rocks for the tank as it seems most rocks buffer the PH of the water at an alkaline level. If you really want to use rocks as your decor do some thorough research into the kind of impact a given rock as on the water chemistry before committing to buy.
