What would be some good plants to keep in the tank with guppies?

I would say easy stem plants like anarcharis, and plants like java moss for any babies to hide in.

Guppies enjoy easy stem plants like anacharis. Java moss is good for the fry to hide in. I especially like having a lot of hornwort to hide the fry.
