Overheating A Tank

I have a spare 300watt heater that I was thinking of putting in my fry tank so I don't have to buy yet another to heat it. The tank is about 80 litres. If I put too big a heater in it will it overheat the tank or will it just heat it quicker?

put it in (before the fish) and keep checking the temp if it is way too hot then turn it down. but the thrmastat should keep it at the right temp.
