i have had mine up for 2 and a half weeks and im still getting 1 bubble every 6 seconds.
when should i replace the mixture,when the bubbles drop to like 1 every 10 secs or stop completely.

I'd say just go till it stops, at least thats what i do.
 
My thinking here could be wrong here, but ......................

I have 2 fermentation canisters feeding into one diffuser, (using a 'T' connector) I change each canister
approx every 7 days (Not both on the same day - usually 2-3 days apart), even though they are still
producing CO2 bubbles.

The reason I dont wait until the bubbles stop is that when it produces very few bubbles the amount of CO2 entering the tank decreases...... less CO2 will cause a rise in PH compared to when it is producing far more bubbles. So to avoid too much fluctuation in my PH, I change the mix before the lower CO2 level causes
the PH to change!

Be interesting to hear from somebody with more CO2 experience if they can confirm what I'm thinking ?

I have to agree with Mr. G, less bubbles means less C02 causing the ph to rise. I use one 2 litre bottle and I change the mix once a week to keep things stable. By the end of the week I get a bubble about every 3 seconds.
