I just started cycling my new 30 gallon tank, and was just looking for ideas for fish! I was leaning towards Dwarf Gourami's or Dwarf Cichlids, but further to that I'm at a loss of what to do.... So I'm just looking for ideas on what other fish to stock with, or if I should plant or not.

Dwarf gouramis are lovely fish. Probably my favourites.
Live plants are always a good idea for a number of reasons.
If you want more suggestions, I would say the best thing to do would be to go to your LFS and see what you like the look of, then take to the internet to see which of those you liked are suitable for your tank.
