confusion

So, my wife is getting me a new aquarium for our bedroom for father's day. I just ordered it!
It's from glasscages.com (yeah, I know, I read up on them, but I think it'll be fine for what I ordered)
It's a 125USG (60x18x25) with a stand and canopy. I also bought it with starphire glass on 2 sides. I have a 29G in there now, so it'll be a nice step up. I'm planning on going with a planted tank, this time trying aquatic soil instead of gravel like the other tanks. I'm going to attempt a Takashi Amano (sp?) like tank. We'll see how well I do.
I have two mated pairs of angels, and one pair will go in the 125 and the other will go in a 30G I have in my office. I have a herd of baby angels that I'll be splitting between a 55G and, the 125 and the 29G, which I'm planning to put up in my oldest son's room. I will likely have to give some angels away as they grow - I have about 16 that have survived from various batches, all under about 1" so far.
I also have a pair of "bull" angels that have forgotten to stop growing in my 55G now that I'll be putting into the 125.
In the 125, I think I'll end up with about 6 angels, and I have 6 honey gouramis that I'll be moving in, as well as my 2 big plecos.
I have 3 dwarf gouramis that may go in, and a bunch of swordtail and platies I've raised from fry. I'm torn, though. I've started getting a bit disenfranchised with livebearers - they just aren't hardy fish.
I'm thinking that I want to do something new in the 125, though. I have angels, gouramis (pearls, dwarves and honeys), harlequin's, glofish, serpae tetras, plecos, swordtails, and platies. I'm thinking something like rams, or something smaller that schools tightly. Any suggestions?
I have to decide on lighting, which should be a bit easier with the canopy, since I can buy retrofit kits, and I need to settle on a filter. I think in the short term, I'll be using an XP3 I have, and may just buy another . I have 5 XP2's and 3's, so it's nice to keep them common for spare parts, swap-out emergencies, etc. I've been doing the DIY CO2 thing on 3 of my other tanks, but I'm going to get a regulator/diffuser for this one. I'm tired of using all the sugar in the house every other week
