New German Ram.. Acclimitisation Problem.

I am trying to create a Blackwater Creek Biotope. At the moment my pH is 7.4-7.6 but I'm slowly lowering it (using peat) to around 6.5. My ammonia is 0, nitrites 0, nitrates around 20 (working on lowering these but 40 in the tap water) and my gH is around 18 but again am slowly lowerign this using peat to 10.

I bought a pair of German Rams (adults) yesterday, they were kept in the LFS at pH 6.5 so I drip acclimatised them over 3 hours.

The male Ram is fine (so far) also a cockatoo I got yesterday who was also in pH 6.5 and drip acclimatised is fine, but the female straight away went to the top gasping for air and hiding and didn't move all day or night and she wont eat. I decided to put her in my hospital tank where I have an airpump running.

Right now she is VERY pale, she is swimming a little erratically, sometimes lying on the bottom of the tank and just generally in a bad way. She is also gasping a lot (although not at the suface anymore) and her gills are going really fast.

Just wondering why she is like this? I don't think it can be bacteria, disease etc. as she was absolutely fine in the LFS. Could it be the pH, or Nitrates? Also is there anything I can do for her? She looks like she'll probably die.
