I have a brackish tank that is about 3 months old and added about 1/2 dozen nerites snails about 3-4 weeks ago. When I woke up this morning several of my structures were COVERED with tiny white specks. Would these be snail eggs? And if so, it is unusual for them to lay that many eggs that fast? If not, what could it be? I have no clue about snails or their eggs.

Sounds normal. I only have two, but there's always eggs on slate or the glass. They even lay them on the shell of my apple snail. They look like tiny grains of rice. They're easy to knock off of smooth surfaces, and if you have any kind of pleco, once it gets a taste for the eggs they'll keep them down pretty well. Even though they lay eggs, nerites usually don't breed in freshwater. My eggs seem to hatch, but to date I've never seen a baby snail, so they're either dying or being eaten.
