Originally had about 16 in my aquarium and slowly over the last 8 months they have been dying. I can tell which one is about to die as the colour fades and instead of the fish being straight from head to tail it takes on a sort of crooked look. Any ideas what might be going on?

This sounds like Neon Tetra Disease (Pleistophora hyphessobryconis) to me :( Unfortunately there is no known cure for it.
The best thing to do is to separate the infected ones and euthanize them :(

Here you go if you'd like to read for yourself and see the symptoms -

Wow that sounds like it could be it!! Worried now because I have other fish in the tank, can they become infected and also die? Sincerely hope not!!

Im not entirely sure but I would say no considering it is a Neon Tetra disease...but to be safe I would probably remove them from the tank :(
