might sound like a really obvious question..... but am I right in thinking you definately need to keep more females than males.... and 3 females to every male is a sort of preferable ratio ?

just tried to buy some extra female molly's yest and the shop wouldn't sell them in anything other than a male and female pair.... tried to say to the bloke that's not a sensible long term stocking of the fish so surley they shouldn't only sell them like that..... he was having none of it. Am I right?

yes you are right the minimum female to male ratio is 2 : 1 (2 females for every male) .
