Does anyone know if there's any advantage or disadvantage to mixing different types of yeast when making a DIY CO2 solution? I have two different types - 1 is the allisons dried baking yeast, the other is a wine making yeast which tollerates a high alcohol content. Is it ok to mix the two in the solution or will the different types of yeast kill off each other?

Thanks

Yeast mixtures usually fail due to either of the following:

1/ The yeast uses up all available food (sugar)
2/ The yeast dies in its own by-products (alcohol)
3/ The yeast dies due to too low a pH caused by the fermenting process.

As far as I know (please correct me if I'm wrong) different types of yeast will not harm each other. If anything, one type of yeast will out compete the other and you'll end up with a one yeast mixture. As you say the brewer's yeast will tolerate a higher alcohol content (much like me after Christmas) so, with all things being equal and there being enough sugar to go around, your mixture will last longer with brewer's yeast. I have no idea what advantages bread making yeast has over brewer's yeast except cost.
