We had three Red Wag Plattys, but two have recently died. However, there are three fry in the tank too, about 2 months old.
Should we get new companions for the adult, or will he be okay until the fry are fully grown?
If we do replace the adults, we will be at the limit of stocking as our community tank is only 16 gallons.

What else is in the tank? The volume of the tank doesn't matter so much as the dimensions. Your fish will not normally take up the vertical space as well as the horizontal space. I would wait and let the fry grow up. You don't want to add more right now. Let the fry grow up. Platy will do fine on their own. If you do decide you want to add more Platies, make sure you get the sexes right. You don't want to keep all males generally, and the female to male ratio should be 3:1 for the first male and 2:1 after that so the females don't get harassed.
