how do i prune and reproduce this plant? do i just replant a snipped stem?

cut the stem and replant.
cutting the top makes it produce side shoots and bush out.
Uprooting and cutting off the bottom makes it grow upwards.

ok cool. where exactly should i cut it for the sideshoots? right below the little mushroom shaped top?

wherever you cut it, that is the place where sideshoots will be produced.
Cut it just above the 'node' (little ridges on the stem, where the leaves grow from)

ok. then is there a way to just shorten a stem and keep it singular, rather than having every one split?

uproot and cut the bottom off. A pain i know. The other option is to cut the side shoots off.
