I know virtually nothing about live plants, but I have been looking for this kind of plant... a micro grass.

microsword is a short plant that grows 2-3 in. It's not a very difficult plant to care for, and over time, will spread itself accross the substrate giving a grassy look. It's a popular plant.

Are there any other similar plants that dont get quite as tall? or can you trim it down to a shorter lenght?
