Hi

I add seachem iron and seachem potassium to keep the plants nice and healthy

i was just wondering if its ok to add them both at the same time or weather its better
to add one and then add the other a few days later

also what are the optimum iron levels in a planted tank?

it is fine to add them at the same time. It is iron & Phosphate that could react to form insoluable iron phosphate which is the problem.
iron should be around 0.5ppm-1ppm
potassium should be around 20-30ppm
