Ok so day 10 of new tank - 5 days after donor media. Constant water levels of 0 ammonia, 0 nitrites and 5 nitrates - ph 7 - readings (with my new API master test kit) have been stable for 3 days.

I added another Molly and 4 neon tetras yesterday and tonight levels remain stable and fish are well.

Am I cycled??

I still only have little experience but sounds like you are pretty much there
 
However would still keep an eye on it and do regular checks just in-case of any spikes.
