I Know I'm Overstocked Currently

In my 65l (pH 7.8, temp 28C) I have 3 mollies, a betta, a platy, 3 zebra danios, 6 cardinal tetras, 2 bronze corys, 3 amano shrimp and 6 assassin snails.

I am in the process of setting up a 2nd tank, to move the mollies into. Does that still leave me overstocked in the 65l?

Why 28C? That is too high long term for Zebra Danios, they would be much happier at 22/23 (no higher than 24C ideally), plus they are schoaling fish and need 6+.

Overall, as I need to get to work in next min or two, you need to roughly split your stocking into two

I agree with the point NOboday Of The Goat is making.

Personally I would leave the warmer water species (Betta, Amano Shrimp, Cardinal Tetras, Platy) in your current tank. Adjust the temperature to 26C ideally.
In the other tank add the cooler water fish (Bronze Corys, Molly, Zebra Danio, Assassin Snail) Adjust the temperature to 21C-22C
You will then be evenly stocked in both tanks

What capacity is the second tank?

LFS advice, need I say more? Will turn down the temp in there, thanks. I was hoping to have enough room to add to the group of ZDs, likewise I'm also aware the that cories ought to be in a larger group (again LFS advice!). However, if I don't have the room then fair enough.

Platies, being as adaptable as they are, mean you shouldn't worry too much about their temperature, as long as its no lower than 20C and no higher than 28C
Wild Platies are sub-tropical but over the many years they have been kept in aquariums, they have been bred extensively in warmer water where they have adapted to warmer temps, to the point where water temp doesn't make a difference to them.

You going to have to make a choose between what fish you want and go from there. Like said the
Betta and cardinals do best at higher temps (28C is perfect for bettas)
and things like platys, mollys, zebra danios and bronze corys all do best at lower temps (22-24C or even lower for the danios)

I would put the Betta
4 amano shrimp
3 assassin snails
6 cardinals in the 48L

Then have
3 mollys
1 platy
6 zebra danios
6 bronze corys
3 assassin snails
in the 65L

+1 for stock suggestion by kizno1. The only think I would do different is have small tank at 26C and large tank at 22C
