Huge Nitrite Spike!

My nitrIte level is way up (around 5.0ppm) and the ammonia is around .5 or .25ppm [all in the 75 gallon tank]. What level do I need to keep the ammonia at? We are leaving for vacation Sunday, and I need to know how much ammonia to put in-what do I keep it at now that my nitrites are spiking??
 
yeah, the 75 gallon is cycling (i think it's in my signature that it is?). there are currently no fish in there, but w/ me going out of town for a week, i need to know what to keep it at so i can tell my house/pet sitter.
 
Ammonia and nitrite levels should be at zero. It sounds as though your tank is just hitting the usual "spike" in the cycling process. If you have no fish in there, don't do anything to it. Let nature take it's course.
