I suggest you take a look here and read up on EI. Then you should understand the reasons behind the water change.
 
As above - But to quickly answer your question on the water changes, you could lower your light or co2. Basically whatever you choose to limit the growth - as it's this that instigates the water change.

So can I do more than 50% per week?  Like 30% 2 times a week?  I'm just curious because I have corys and I do water changes at odd times to trigger spawning.  If I need to do only one change a week that's understandable. 
 
And does the dosing look ok on that chart?
 
Chart look good - But it's estimative, so if something (an particular algae for instance) tells you you need to increase Nitrate for example, be prepared for that. Not one size fits all.
 
More than 50% water changes (total) will be fine too - Caught us off guard, more used to seeing "I want to do EI but change 50% of the water every 28 years".......
