Ive gathered from looking at the pro's tanks:
big plants at the back
medium, then smaller ones at the front
and a focal point in the middle

is this what i should try to do with mine? :)
 
The focal point doesn't have to be in the middle. Generally, it's good to put it a little towards one side to offset the symmetrical look.

You need to go with whatever you fancy.

What I noticed from looking at other tanks (and what I tried to do with mine) is that the tank generally looks more natural if you keep the number of plant species down to no more than half a dozen, plant the same species in groups so it looks like natural propogation, with just a few scattered further away, so the groups of plants don't look too neat and contrived. Try to avoid symetrical looks as much as possible.

I did go for small at the front, tall at the back with an open swimming area, just because it makes a nice stage to watch the fish, but these sort of rules don't have to be rigidly kept to and often the best ones break the rules.
