Is it better for travelling fish to have more water or less water? Sometimes they seem not to put much in at the LFS.

Obviously you need plenty of air for the long trip so the bigger bag the better. Use enough water to cover the fish's body twice over and dont worry about the water sloshing around. The more it is disturbed, the more oxygenated the water remains... Obviously violent shaking is not reccomended LOL!

Get a box for it, or possibly a cooler if you have one  double bag the fish and fill the bag with around 1/3 water so it covers the fish. The bigger the bag, the better (within reason of course). Try going to a lfs and asking them to fill up the bag with pure oxygen, do this just before you leave so their the largest amount of air possible. Place the bagged fish in the box or cooler and stuff newspaper, or any other insultor such as foam around it so the bag moves as little as possible while in transit.

A couple of days before the move stop feeding the fish so it creates as little waste as possible in the bag, and obviously, try to get it to it's new tank A.S.A.P

Best of luck

Out of curiosity, for longer travel (such as this case, as oppose to a short LFS visit), wouldn't it help to have more water as well? I'd expect that they will produce ammonia during travel, and more water there is, lower the concentration of ammonia...

Anyhow, I may need to transport fishes for 6 hours travel (in my minivan) so in my case, I am going to get some plastic rubbermaid containers and use a (mature) sponge filter, hooked up to the car's DC power...

When transporting fish for long distances it is best to fast the fish for at least 3 days prior to travel, the addition of a quick squirt of a product like AMMO LOCK and one or two oxygenating tablets is also a good idea.
