So I have two home depot light fixtures on top of my tank, 64watts each. They take up a huge amount of space as you can see and I have a 3rd 40watt fixture that I would love to add to this tank to increase my wpg from 2 to 2.5+. How do I reduce the size of these light fixtures? If i take the side reflectors off then all of the wires are exposed.

Those lights are built to not look pretty so you don't have much of a choice to make them smaller :p

You could remove the reflectors, cut the wings off them and then replace the side panels, or use the reflectors as a template for new sides.

could you remove the right reflector from left light, and left reflector from right light, and fix the two together somehow, like this for example

Yeah, that's what I'm thinking of doing, just need to find a way to cut them

easiest way would be with a dremel tool with a metal cutting disc, if you have one,

if not would have thought a hacksaw blade will do the trick, but a little more work
