Morning!

I'm about 3 months in to my fishless cycle, on the 25th September (3 weeks ago), my nitrites finally dropped to zero, so i raised the ammonia level to 5ppm (11.63ml in my tank), now the nitites are dropping to zero in 24 hours but not 12, and it's been like this for just over 3 weeks, does it usually take this long for them to drop or does it seem like my cycle has stalled? Thanks

I wouldn't say it's stalled. Mine stalled and it stopped processing altogether. Just do your best to keep the temp around 29 and the pH around 8 and I'm sure you'll get there soon.

Check you pH to make sure it's not too low (8.0 is ideal). If it is low, do a water change and bring it back up then resume your ammonia doses. I found that a water change kicked the nitrite portion of my cycle into high gear. I believe it was mostly because the pH had dropped to 6.5 and the water change moved it up to 7.5.
