As for adapting to soft, acidic water.. I doubt you would have long-term success. To remedy this, try adding a tablespoon of baking soda to every 20 gallons, and twice that amount of salt. Pickling salt or "coarse" salt works just fine and is inexpensive.

Guppies do go much better in hard water than soft but can get use to the different water parameters. Just keep an eye out on them because I have heard stories of guppuies dying in soft water, so introduce them slowly to it.
 
Gradual changes can help them adapt. Start off with harder water as stated above and in a few months they should still be alive and kicking in softer water. Just don't drop the pH to around 5.5 or the like. :D
