I am planning to get a small group of one of the smaller Corys to add to my tank in a week or so.

Inchworm has kindly given me a list of suitable Crys to check out when choosing them. Likely to be anything from a pygmy/dwarf through to a Bandit/Panda.

When getting a group (say 4 fish) should I be trying to get a certain amount of male/female to ensure a happy group? Or does it not matter/too hard to tell the sex when they are young anyway.

Also I will not have the room in the tank for lots of baby fish so how can I prevent this happening?

Its not that important to get any particular ammount of each gender as far as i know as corys are very peaceful towards each other- its likely though that you will not be able to tell the genders of your corys until they are fully grown as many lfs sell them very young.
The type of cory you get depends on how likely it is they'll spawn, but most fish eat cory eggs long before they hatch and will also eat the fry so its unlikely you'll have fry population problems- what sort of fish do you have in your tank :) ?

My tank is not fully cycled yet (63 litre) so only inhabitants are 2 platys, Male Betta (temporary) and 3 shrimp.

I am looking to get 3-4 small Corys, 3-5 guppys, 5-6 neon tetras (or Marbled Hatchets) and 1 Chocolate Gourami.

Ah well the guppys and platys will gobble up the corys eggs as soon as they find them if mine are anything to go by- my albino corys usually spawn once every 2months and so far no eggs have survived the guppys and platys past day 2 ;) .
