Grassy Moss?

So, working on setting up my planted discus tank.

I want to create a very similar set up as the image below.

Im trying to figure out what kind of plant ( the grassy/moss ) is.

Is that Hemianthus 'Cuba'?

thats hemianthus callitrichoides, not an easy plant to grow without C02 and good flow around the substrate.

You are correct, with No Co2, this is not the plant for me.

Is there any other plant/moss that would be suited for a discus tank, but is very small and grassy like?

with no CO2 you could try either Riccia or just a normal aquatic moss like Java moss.
