German Blue Ram Question

So my female ram is pushing 2 years old. But I know she isn't as colorful as when I first bought her. As they age, do they generally lose color or am I not making her happy enough?
I saw her defending my ozelot sword from danios the other day and she eats fine. She will eat peas, frozen blood worms, and flakes. I had a male who made it to one and a half, they both lost their color but he grew really pale then passed :\ But she is fine.

Hmm.. my female faded but regained color but isn't as bright as she used to be. Is she still too light for her age?

My nitrate is 40ppm, I can't get it to go down because I am using EI, I posted in the plant section. Can you help me with that?
