I have a 125 litre tank with platy, couple of angel fish, flying fox and some gary ruffa. Also 3 dwarph frogs. Is it possible to have maybe a crab or 2 in the bottom or will they cause havoc with everything. I also have a few live plants and a sand bottom.

I wouldn't risk it.
Crabs are known to catch & eat fish, especially when they are sleeping at night.

also i believe crabs need to be able to get to the surface, but imo i wouldn't have them with fish in case they got peckish.

I've seen crabs (red crabs to be specific) catch dwarf frogs  so I would say no.
