Few feeding times

I'm looking to re-establish my saltwater tank, but am not at the place the tank is located on a regular basis (but am there at least once per week). What are the best fish/eels/etc. to place in a tank that has low maintenance? I know saltwater tanks do not lend themselves to a low maintenance style of upkeep by definition, but I want the best of a poor situation.

I was thinking something along the lines of lawnmower Blennie and an eel - anything else?

What size tank, what type of filtration, lighting? An automatic feeder works wonders!

55 Gallon with about 80 lbs of live rock, 4 inch sand bed, and a normal 300 gallon/hr filter. Oh and a power jet too. Lighting is just above the standard bulb...nothing special.
