Ok well I'm looking to buy a jack Dempsey
The dad was electric blue but the mum was a normal jack with no Blue gene

Now because of that the fry look like normal jacks
But would they carry the blue gene now?
Anyone that can help me on this topic will be great and how it works

I'll have to take your moms side and go for a regular jack dempsey. Electric Blue Jack's are very expensive, and are prone to dying for no particular reason. Even experienced aquarists rarely keep one to even reach its full size without it dying, and jack's grow very fast.

if you're talking about them breeding a regular JD and an electric blue JD and all of them coming out normal, that's likely because the regular JD has the dominant genes. Chances are if they aren't electric blue now, they won't turn electric blue later.
 
the fry from an EB and a normal result in fish which are known as 'splits', they carry the blue gene but do not show it, if you breed one of these splits with an EBJD you will get EB fry, i cant remember the ratio of fry though
