I have two plants, the same species (name escapes me) they have roughly 5 stems each and on both, 2 of these stems are a tanned colour. So are they dying, and should I cut off the old stems, if so then how far down?

Cheers

No Im afraid not but I'm almost certain now that they have a couple of dying stems, some of the roots seem to look dead too, where should i trim them off though?

From your pic it looks like java fern and you seem to have buried them. (I'm on a phone so can't tell 100% ). If so, they have a rhizome (a small pod like nodule in the root cluster) that needs to be kept about the substrate otherwise the plant will die.
