I have 2 undergravel filters running in my tank and also a UV Filter like this one:

I want to remove the undergravels as they limit the space i can put plants in my tank so i have to put most plants in front of the tank when id rather have them at the back. Do they help by much or should i just remove them??

I use under gravel filter in my 12tre and although. An limit a little I just added
An extra layer of gravel. I find the indergravel free tends t pull larger debris and waste onto the gravel itself hence just makes it a bit easier when hoovering but I can't see it been a major thing if you remove it ... Hey, each to there own!!

That UV is only a sterilizer, it's not a full, biological filter.

Of course you can remove your undergravels, but you'll have to replace them with an internal or external filter, which will need seeding with as much of your gravel as you can fit in.

You can't run the tank just on a UV; that's only an addition to your 'normal' filtration.
