Discus?

Have a good size tank, with good filtration and keep locally bred stock.
If you have a healthy tank that is big enough for them, and you feed them a varied diet, keep the water clean and at an appropriate temperature, they are not much more difficult to keep than any other fish. Problems arise when they get sick from poor environmental conditions or bullying, and then they stop feeding. When that happens they can be hard to keep going.

I havnt had too much trouble. It's not that they are difficult, its just they require a lot of work. The simpliest way of doing it would be to buy full grown adults. They require less feeding thus the tank water wont foul as quickly and wont need to be changed as often. The downside to that is they will cost at least $100 each for a decent fish, and a group of 5 minimum is required to prevent them from killing each other, so if you dont mind spending $500 minimum to get started you should be ok. You would need at least a 45-50 gallon tank with some hardcore filtration and aeration too. I dont know if I would do it again. I think my next pet is gonna be a cat.

not difficult, just require better level of care than most tropicals, and a lot more thought on their environment & companions.

No, you need to keep more unless you plan to buy a bonded breeding pair. Search the forum for Discus there's lots of good info on here...
