I am thinking of breeding them but don't know anything about them. So if you know anything, tell me :) Do they do well with German Blue Rams?

Yeah, they can go okay with the German blue ram. You will need to either buy a proven pair which is risky, or get a pair youself. Get about 6 small Discus and put them into a 29 or so gallon tank. Once they grow and you get a pair you can take the rest back...

Thats a good idea, wonder why I didn't think of that. and my ram tanks it a 40 gallon being filtered by a biofilter filtering a whopping 320 gallons an hour and the pH is below 6.5 and the water is really soft. I heard you needed hard water to breed, so is that going to be a problem?

Actually, that isn't correct. If the water is too hard, the eggs with become calcium enriched, and end up dying. Softer, acidic water is actually better for the Discus, and may even encourage them to breed, although i'm not sure when soft is actually too soft, but if it's around 6.5 it should be fine.
