In the long run, yes. Personally, I think that keeping only one is a very nasty thing to do to a social fish, but it still beats being picked on to death. My recommendation is to get 2 more.

Regardless of whether you keep 1 or 6, you will need a taller tank so the fish can do more than swim in a straight line, so you will need to upgrade.

Your water parameters should be fine for growing discus on. Unless you cycled the filter with household ammonia, or unless it came from an established tank, you are going through a fish-in cycle which means that you can expect to see ammonia within the next week. This will not be fine for the discus, so it is important that you know about fish-in cycling.
I've never heard of people successfully keeping a single discus in an aquarium. At best, I've seen people keep a breeding pair without other discus. But really, saying "Oh, I don't have the money for more of you guys, just gonna get rid of a couple here and keep you alone" is not the best idea I've heard.
 
I thought even if discus pair, they need to be in schools :S - Could someone correct me?

:\ if they are a bonded pair they will be fine. If theres other discus when they spawn they wont want them in the tank anyway.

That's the point: it is a really #105###ty thing to do. I have heard of it working, but not that well, which is why I am recommending adding 2 more.
