My tank has been planted (successfully!) for nearly 8 weeks now and a number of the plants have started growing roots at roughly 2 inch intervals all the way up the stem.

Is it now that I should be taking cuttings? And if so where??

When you take a cutting, try get some roots on the cutting (if you get me). This will make it easier for it to become established on its own, rather than without a root at all as it will use most of the energy creating roots which will slow the initial growth down.
