The latest issue of National Geographic has a fascinating article about making low (or no) alcohol beer and yeast that produces low or no alcohol. Those of you who are running yeast generators might be interested. It is a complex environment involving many factors. And after studying and making so many of them back when DYI generators were all we had, I was happy when Co2 injection advanced to where it is today! Back then, yeast and later, citric acid generation was the thing. I am a 'recovering' high tech planted aquarium keeper and now only keep low tech tanks. They are so much more relaxing! Anyway, thought I would mention the article.
