exactly in what way does excess Co2 affect stability of tank

any links or first hand experience
 
Excess CO2 may well kill your fish.

As for the stability of the tank, I switch my CO2 off overnight which results in a minor pH rise, which drops back down during the photoperiod with the CO2 back on.

Hope this is what you were after.

im unable to switch mine off, my phs on all 5 tanks have all risen from 6.5 to 8.5, only lost a few fish which was to do with nitrate
 
The initial addition of CO2 will bring your pH down, but provided it is stable, it will not affect your pH thereafter. Obviously, there are other factors that will.

How much nitrate did you have in your tank to kill your fish?
