Cichlid Tank

Ok, so this is what I have so far (in my mind, I won't have the tank for a while)
2 Blue Peacock Cichlids (one male, one female)
1 Red Peacock Cichlid (female)
1 Yellow Peacock Cichlid (female)
1 Albino Peacock Cichlid (female)
1 Red Empress (male)

That's what I'm hoping to stock my 75 through 125 gallon with. Any other fish I could add?

I'm a little confused. Peacocks females are very bland and colorless. Are you sure you didn't mean males of all of those?

Peacocks should be kept either a single species in any one aquarium, or multiple species with no females at all.
 
Ok, then I may start over, but I do want at least six Electric Yellows.
 
Well then something like this might suit you:

A group of electric yellows
Various male peacocks
Various mildly aggressive Haplichromines (Placidochromis, Sciaenochromis, Copadichromis, Protomelas)

As long as you go with only one type from any group you have the option of adding females.
