When setting up a mumba tank how big and how many caves should there be and will this change as they grow?

Mbuna like to have alot of caves formed by rocks, it makes them feel comfortable etc etc and is what they have in Lake Malawi.
A minimum for any Mbuna tank,IMO, is 30 gallons, but some will say 55 gallons.

I would'nt go for a 30g.
Go for a 55 gallon. it would be much easier for you to maintain

If you do go for a 30 gallon the best fish for it would be Labidochromis or a few Pseudotropheus as they are not as aggressive as many others and are pratty much the only Mbuna suitable for a 29.

Here are a few

Labidochromis sp. "Mbamba"
Pseudotropheus sp. Zebra Long Pelvic Mdoka
Pseudotropheus sp. Zebra Long Pelvic Hara Gallireya Reef
