Heh...I'm just wondering if it's possible to have too many plants. I just got a bunch of plants that I had ordered online, and they were a bit more than I expected. Everything has a spot and you can still see the substrate. There is plenty of room for the fish to swim and they really seem to like the plants, but I wanted to know if there is anything I need to watch for or be careful about? (Other than making sure any dead plant material is taken out asap.)

I don't think there's anything wrong with too many plants, my 56gal is almost completely planted up to the brim; my only concern would be is that plants take oxyegn out of the water at night so you need to have good filtration just to make sure the fish get enough oxygen at night.
What do the spots on the plants look like- do they look deseased?

Yeah...what ccg said. No plant disease problems so far. I wanted a lot of plants 'cause I've got neons and I like to have the light on a lot so they needed places to hide. They're loving it too. Now that they have cover, they're not hiding at the back of the tank anymore, but schooling in the front where I can see them. They're getting huge.

I'm so glad lots of plants are okay, because I love a heavily planted tank. They're beautiful.
