Can i add fish yet?

As some of you know, i put some mature media out of another tank i've got into the filter in my new 180litre. I put 4 goldfish in there out of our pond to keep a constant supply of ammonia (if you dont agree with this, please have a go at me on the thread i did about this )

The tanks been running for around three weeks now, and my water test results are as follows;

Nitrate - 80ppm (im going to do a 50/75% water change to lower this before i add the fish)
Nitrite - 0.5ppm
PH - 7.0/7.5
Ammonia - 0ppm

I'm hopefully adding my fish next Saturday, so thought i'd get the opinion of you guys.

Wait for the nitrite to drop to 0 and you should be able to add fish in!

Yep that was my thought, wait for that nitrite to drop!!

Nitrate doesnt drop though does it? I thought the idea was Ammonia is removed by turning into Nitrite, Nitrite is removed by being converted into Nitrate, and Nitrate is removed by doing a water change. Probably just me being silly
