Angelfish strains do make a difference in pricing, however only a slight one. as with anything else, it's all about demand. one of the most popular for the average aquarist right now would be Koi angels. if you target more passionate angel keepers, you may want to get some Pinnoy double blacks or Paraiba Blushers from Ken Kennedy. He has pretty much the best of the best in angelfish available at the moment. those will cost you much more for a good pair though. the genetics behind it is complicated. from what i've seen, the best suggestion is for you to pick angels that you like how they look, and breed them...forget the genetics in the beginning.
in terms of pairing them up, everyone tells you to get a group of 6 or more and pairs will form on their form. i prefer buying them big and already sexed by the previous owner or breeder if possible. this however carries the risk of the angels being the right sexes, but just not liking each other!!! there is no 100% way of sexing angelfish other than when they are spawning. the female has a wider, thicker tube coming down (plus of course, she lays the eggs!). the male has a smaller, thinner and pointier papilla, and obviously does not lay the eggs, but will follow behind the female and fertilize them. with time there are some things you can look for, and there are also hunches you get, as happens with me, but i've been right only at the most 75% of the time.
in terms of tank setup, you should do research. there are several good angelfish forums with in-depth information. getting them to spawn is easy...getting the eggs to survive and the fry to grow healthy is a different story. way out of the scope of a post here i think.
